mock tuna

My 12-year old has been a devout vegetarian for three years now.  She isn’t vegan and will eat unfertilized eggs, dairy products, and honey.  I myself am vegaquarian, I’ll eat fish but no other types of meat.  The boys, omnivores all ‘round.  Cooking isn’t too difficult believe it or not as generally the boys get their animal products “on the outside”.  And we’ve got facon, fakey bakey – whatever you want to call i – that tides us over.

But the other day Miss R was craving tuna salad.  I’d bought myself the little prepackaged tin of tuna salad and crackers for days when I’d otherwise eat either something worse, or nothing for lunch and I suggested to Miss R that she could have that if she really wanted. But she stuck to her guns.  So this morning I made a batch of Mock “Tuna” Salad for her based on a recipe from Meatless Meals in Minutes for Working People.

Mock “Tuna” Salad

  • 1 cup chickpeas
  • 2 green onions
  • 1 stalk celery
  • 3 Tbsp mayonnaise
  • Salt & Pepper to taste

Combine the first 3 ingredients in a mini food chopper and finely chop.  Add mayonnaise and season to taste.  Done.

* btw Miss R hated it.  of course.  I liked it.  I’m going to try a curry version next time.
